MAKES 4 SERVINGS PREP TIME: 10 MINUTES COOK/BAKE TIME: 25 MINUTES1 CUP CRAB MEAT, CHOPPED (CAN USE IMITATION CRAB)2 TABLESPOONS DRY SHERRY 2 TABLESPOOS BUTTER OR MARGARINE 2 TEASPOONS ARROWROOT 1 CUP LIGHT CREAM 1/2 TSP SPICE ISLAND BEAU MONDE SEASONING 1/8 TEASPOON PEPPER1/4 TEASPOON DRY MUSTARD 2 TEASPOON DRIED PARSLEY1 EGG HARD COOKED, CHOPPED 1 CUP MUSHROOMS, SLICED1/2 CUP SWISS CHEESE, SHREDDED1/8 TEASPOON PAPARIKA PREHEAT OVEN TO 350 DEGREES F.COMBINE CRAB AND SHERRY; SET ASIDE. MELT BUTTER IN LARGE SAUCEPAN OVER MEDIUM HEAT; BLEND IN ARROWROOT. ADD CREAM GRADUALLY. STIR IN BEAU MONDE,PEPPER,AND MUSTARD. COMBINE TO COOK, STIRRING CONSTANTLY, UNTIL SAUCE THICKENS AND COMES TO A BOIL. REMOVE FROM HEAT. ADD PARSLEY, EGGS, MUSHROOMS, CHEESE AND CRAB MEAT. SPOON INTO 4 BUTTERED RAMEKINS OR 1-QUART CASSEROLE. BAKE 12 TO 15 MINUTES OR UNTIL BUBBLY.SPRINKLE WITH PAPRIKA BEFORE SERVING.
