KATIE'S PUMPKIN BREAD
4 eggs (room temp) 1 cup vegtable oil2/3 cup warm water 1 16 oz can pumpkin2 1/2 cups sugar Combine and mix well. Set aside Next combine3 1/3 cups flour 2 teaspoons baking soda 1 1/2 teaspoons salt3 teaspoons Tones cinnamon3 teaspoons Tones nutmegCombine well and gradually add to the liquid ingredients. Mix well. Spray nonstick coating to two loaf pans and divide mixture equally.You also can save the cans from the pumpkin . Spray the insides of the cans, pour in the mixture being sure to fill 1/2 to 3/4 full. DO NOT OVERFILL. Bake at 350 degrees for 40-45 minutes . Cool on wire rack 10 minutes then remove from the container. Cool completely. Store in airtight bag. Freezes well.
